Soak the mushrooms in hot water for 10
to 15 minutes, then wash under running water to remove any sand.
Drain very well and wipe dry with a cloth. Cut into pieces, put aside.
Skin the onion and chop finely. Gently fry the onion with 1 ounce of butter
in a large frying pan until transparent. Then add 2 2/3 ounces of butter.
As soon as it sizzles, pour in the mushrooms, stir, cook gently for 5 minutes.
Heat the cream until it boils, pour it over the mushrooms, salt, pepper,
add the lemon juice. Reduce uncovered. Melt the remaining butter in another
frying pan until very hot, brown well both sides of the bread slices. Serve
the fried slices covered with a generous layer of mushrooms.
